ST. PADDY’S DAY PUDDING CAKE

If you’re too old for the parade...

I read this article and was reminded of a time in 2006, when I made a pudding cake with a friend on a similar Saturday. I can’t think of why we thought to add Jell-O at that time but we did and it was (sorry) moist. I never had the delusion that it could be more broadly appealing because I’m clearly no talent at decorating cake. The above isn’t remotely near anything that can be considered commercially appealing, but it took almost no time to throw together and was a happy little reason to host friends for cake and tea to celebrate St. Patrick’s Day.


To make the cake::



Bake according to package. Decorate with powdered sugar icing jazzed up with green food coloring. Involve pistachio paste if you can. Add green sprinkles.


Serve with good Irish breakfast tea and Dropkick Murphys when you’re too old to be bothered with green beer and parades
